Our idea was to use the natural method of fermentation at room temperature to put the flavor and aroma of fresh chili peppers into Extra Virgin Olive Oil.

The qualities typical of habanero chili peppers derive from polyphenols, natural organic micronutrients present only in fresh fruit, which can be destroyed in drying or cooking processes.
